Freeze Drying
What It Does
Freezes the product, then removes moisture via sublimation under vacuum at low temperature — a slower, gentler process than hot-air drying that preserves color, aroma and nutritional content.
Suitable Applications
- — Fruit slices and pieces
- — Vegetable pieces
- — Snack-format freeze-dried products
Not the same as: Freeze drying is not the same as VPT puffing. Freeze drying removes water by sublimation from a frozen state; VPT puffing uses a rapid pressure differential on pre-treated product. Different equipment, different textures.
